🧅 Sauté
Heat olive oil and cook onion and bell pepper for 5 minutes until soft. Add garlic and spices and cook 1 minute.

🍅 Simmer
Pour in the crushed tomatoes and simmer for 10 minutes until thickened.

🥚 Poach
Make wells in the sauce and crack an egg into each. Cover and cook for 5-7 minutes until the whites set.

🌿 Serve
Garnish with cilantro and serve with crusty bread.
