Easy Vegetable Fried Rice

🍳 Scramble eggs
Heat 1 tbsp oil in a large wok over high heat. Pour in eggs and scramble until just set. Remove to a plate.
🧄 Sauté aromatics
Add remaining oil, onion, and garlic. Stir-fry 1 minute.
🥕 Cook vegetables
Add peas and carrots, stir-fry 2 minutes until heated through.
🍚 Add rice
Add cold rice, breaking up any clumps. Stir-fry 3-4 minutes until lightly toasted.
🥢 Season
Drizzle soy sauce and sesame oil, toss with green onions and scrambled eggs. Serve immediately.
