🥚 Boil the Eggs
Place the eggs in a saucepan and cover with cold water. Bring to a boil, then cover, remove from heat, and let sit for 12 minutes.
❄️ Cool and Peel
Transfer the eggs to an ice bath for 5 minutes, then peel and slice in half lengthwise.
🥣 Make the Filling
Scoop the yolks into a bowl. Mash with the mayonnaise, Dijon mustard, and vinegar until smooth. Season with salt and pepper.
🍽️ Fill and Garnish
Pipe or spoon the filling back into the egg whites. Dust with paprika and sprinkle with chives before serving.
