🧅 Cook the Vegetables
Melt the butter in a large skillet over medium heat. Add the onion, carrots, and celery and cook for 6 minutes.

🥣 Make the Sauce
Sprinkle in the flour and stir for 1 minute. Gradually whisk in the chicken broth and milk. Simmer for 5 minutes until thickened.

🍗 Combine
Stir in the chicken, peas, and thyme. Season with salt and pepper, then transfer to a baking dish.

🥧 Top with Pastry
Lay the puff pastry over the top, trim the edges, and brush with the beaten egg. Cut a few slits to vent.

🔥 Bake
Bake at 400°F (200°C) for 30 minutes until the pastry is golden and puffed. Let rest 5 minutes before serving.
