Season the tenderloin, then sear in olive oil over high heat for 2 minutes per side. Brush with Dijon and cool.
🍄 Duxelles
Sauté the mushrooms until all moisture evaporates, about 10 minutes, then cool.
🥓 Wrap
Lay prosciutto on plastic wrap, spread mushrooms, place beef on top, and roll tightly. Wrap in puff pastry and brush with egg.
🔥 Bake
Bake at 400°F (200°C) for 35-40 minutes until golden. Rest 10 minutes before slicing.
