- 2 cups fresh pineapple chunks
- 1 cup ripe mango chunks
- 1 cup coconut water
- ¼ cup fresh lime juice
- ¼ cup sugar
- 1 teaspoon grated fresh ginger
- few fresh mint leaves
📖 Instructions
🍍 Prepare the fruit:
Peel and chop pineapple and mango into chunks.
🌀 Blend:
In a blender or food processor, combine pineapple, mango, coconut water, lime juice, and sugar (or honey). Blend until completely smooth.
🍯 Taste and adjust:
Check sweetness and acidity. Add more sugar/honey or lime juice if needed.
❄️ Chill:
Pour the mixture into a shallow container and chill in the fridge for about 30 minutes.
🧊 Freeze:
If you have an ice cream maker, pour the mixture in and churn according to the manufacturer’s instructions until it reaches sorbet consistency.
If you don’t have an ice cream maker:
-Pour the mixture into a shallow, freezer-safe dish.
-Freeze for about 1 hour, then stir vigorously with a fork to break up ice crystals.
-Repeat stirring every 30 minutes for 3-4 hours until smooth and frozen.
🍧 Serve:
Scoop into bowls or glasses. Garnish with a mint leaf or a small wedge of lime if you like.
