Tiramisu

🧂 Ingredients

  • 6 egg yolks
  • ¾ cup granulated sugar
  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1½ cups strong brewed espresso
  • ¼ cup coffee liqueur
  • 1 package (about 7 oz) ladyfinger cookies (savoiardi)
  • unsweetened cocoa powder
  • dark chocolate shavings

📖 Instructions

🥚 Make the Egg Mixture
In a heatproof bowl, whisk together egg yolks and sugar. Place over a pot of simmering water (double boiler-style) and whisk constantly for 6–8 minutes, until the mixture is pale, thick, and slightly fluffy. Remove from heat and let cool.

🧁 Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

🧀 Fold in Mascarpone
Gently fold the mascarpone into the cooled egg mixture until smooth. Then fold in the whipped cream in two parts until fully combined and fluffy.

☕ Prepare the Coffee Dip
Mix the cooled espresso with the coffee liqueur (if using, like Kahlúa or Marsala wine) in a shallow dish.

🍪 Assemble the Layers
Quickly dip each ladyfinger into the coffee mixture (1–2 seconds per side) and arrange them in a single layer in a 9x9-inch dish or similar. Do not oversoak.

Spread half of the mascarpone mixture over the ladyfingers. Smooth it out. Repeat with another layer of soaked ladyfingers and the remaining cream.

❄️ Chill
Cover and refrigerate for at least 6 hours (overnight is best) to allow the flavors to meld and the texture to set.

🍫 Finish and Serve
Right before serving, dust generously with cocoa powder and garnish with chocolate shavings if desired.
