🥓 Render the Bacon
Cook the bacon in a large pot over medium heat for 5 minutes until crisp. Remove some for garnish, leaving the drippings.
🧅 Cook Vegetables
Add the butter, onion, and celery to the pot. Cook for 5 minutes. Sprinkle in the flour and stir for 1 minute.
🥔 Simmer
Gradually whisk in the clam juice, then add the potatoes and thyme. Simmer for 15 minutes until the potatoes are tender.
🦪 Finish
Stir in the clams and heavy cream. Warm through for 3 minutes without boiling. Season to taste.
🍽️ Serve
Ladle into bowls and top with the reserved bacon and oyster crackers.
