Add the watermelon, mint leaves, lime juice, honey (if using), and water to a blender.
Blend until completely smooth.

If you prefer a smoother drink, strain the mixture through a fine mesh sieve into a pitcher or jar. Otherwise, keep the pulp for extra fiber and texture.

Chill in the fridge for 15–30 minutes for the best flavor.
