📖 Instructions
🔥 Preheat the Grill
Heat your grill to medium heat (around 350–375°F / 175–190°C).
Clean and oil the grates so nothing sticks.
🌭 Prep the Sausages
Lightly brush sausages with olive oil (prevents sticking and helps browning).
If sausages are raw (not pre-cooked), you can parboil them in beer or water for 5–8 minutes before grilling — this helps cook them evenly and prevents bursting. Totally optional but helpful.
🔥 Grill Time
Place sausages on the grill over indirect heat (not directly over flames).
Close the lid and grill for 10 minutes
Flip sausages on other side to get even color.
Close the lid and grill for another 10 minutes
Using a food thermometer, ensure sausage reaches at least 160°F (71°C) for pork/beef or 165°F (74°C) for poultry for safe consumption.
❄️ Quick Ice Bath
Remove sausages and plunge into an ice water bath for 30–60 seconds.
This stops cooking immediately and firms up the casing — no burst skins or overcooked centers.
🔥 Finish Over Direct Heat
Return the sausages to the grill over direct heat. Grill for 2–3 minutes, turning occasionally, until the skin is crispy and beautifully browned. The internal temperature was already checked in a previous step, ensuring they’re cooked through. This final step crisps the skin and gives them the perfect snap, leaving them firm, juicy, and perfectly browned.

Let them rest for a couple minutes, then serve however you like:
Classic: On toasted buns with mustard and sauerkraut
