- 1 lb large shrimp, peeled and deveined
- ½ cup all-purpose flour
- ½ cup cornstarch
- ¼ cup vodka, ice cold
- ½ cup sparkling water, ice cold
- 1 tsp baking powder

- oil for frying (peanut or canola)
- ½ cup mayonnaise
- 1 tbsp vodka
- 1 tbsp fresh lime juice
- 1 tsp orange zest
- 1 tsp sriracha
- 1 small garlic clove, minced
- salt to taste
📖 Instructions
🍋 Prepare the Aioli:
In a bowl, whisk together mayonnaise, vodka, lime juice, orange zest, sriracha, and garlic. Season with salt. Chill in the fridge while you make the shrimp.
🍤 Prepare the Batter:
In a mixing bowl set over ice, whisk together the flour, cornstarch, baking powder, and a pinch of salt.
Add ice-cold vodka and sparkling water, and gently mix just until combined (lumps are okay — don’t overmix).
🔥 Fry the Shrimp:
Heat oil in a deep pot to 350°F (175°C).
Pat shrimp dry. Dip each one into the batter and carefully lower into the oil.
Fry in batches for 2–3 minutes until golden and crisp. Drain on a paper towel.
🍽️ Serve:
Arrange shrimp on a platter.
Serve with a side of your citrus vodka aioli for dipping.
Garnish with fresh herbs, lime wedges, or a light dusting of chili powder for flair.
