📖 Instructions
Serves: 8–10
Prep Time: 20 minutes
Bake Time: 30–35 minutes
Level: Easy to moderate
🔥 Preheat & Prepare
Preheat your oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans (or line with parchment paper).
🥣 Mix the Dry Ingredients
In a large mixing bowl, whisk together the 1¾ cups flour, ¾ cup cocoa powder, 2 cups sugar, 1½ teaspoons baking powder, 1½ teaspoons baking soda, and 1 teaspoon salt.
🌀 Add the Wet Ingredients
Add the 2 eggs, 1 cup milk, ½ cup oil, and 2 teaspoons vanilla to the bowl.
Beat on medium speed for 2 minutes, until smooth and combined.
🍵 Add the Hot Water (or Coffee)
Carefully stir in the boiling water or coffee. The batter will be thin—this is normal!
⏲️ Bake
Divide the batter evenly between the two pans.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
🧁 Make the Frosting
Beat the 1 cup unsalted butter until creamy.
Sift in the 3½ cups powdered sugar and ½ cup cocoa powder, then mix until combined.
Add 1 teaspoon vanilla, salt, and ¼ cup heavy cream one tablespoon at a time until it reaches a smooth, spreadable consistency.
🎂 Assemble the Cake
Place one cake layer on a serving plate.
Spread a thick layer of frosting on top.
Add the second cake layer, then frost the top and sides evenly.
🍫 Optional Add-ins or Variations:
Add a layer of raspberry or cherry jam between cakes for a fruity twist.
Sprinkle chocolate chips into the batter for extra richness.
Top with chocolate curls, sprinkles, or fresh berries.
🍷 Best Wine Pairings for Chocolate Cake:
1. Ruby Port
Sweet, rich, with dark berry and chocolate undertones that echo the cake’s cocoa and coffee flavors perfectly.
2. Banyuls
A French fortified wine from the south of France, known for intense chocolate, berry, and nutty flavors — a classic chocolate dessert pairing.
3. Zinfandel
Bold and fruity with spicy notes that stand up to rich chocolate while adding complexity.
4. Cabernet Sauvignon (with moderate tannins)
If you prefer a dry red, a smooth Cabernet with ripe dark fruit and balanced tannins complements the chocolate without overwhelming it.
