Salt at the start seasons deeply from within. Salt at the end controls the surface. Knowing which your dish needs is what separates line cooks from chefs.

Proteins continue cooking after leaving the heat. Pull steaks 5°C below target. Rest loosely tented — internal temp rises as the outside cools.
