📖 Instructions
⏲️ Prep
Preheat oven to 350°F (175°C).
Grease and line an 8-inch round cake pan or loaf pan.
🥄 Dry Mix
In a bowl, sift together flour, matcha, baking powder, baking soda, and salt.
Add the ground pistachios and whisk everything to combine.
🧈 Cream Butter & Sugar
In another bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
Add eggs one at a time, mixing well.
🥛 Add Wet Ingredients
Mix in vanilla, milk, and sour cream until smooth.
🌀 Combine
Gradually fold in the dry ingredients. Don’t overmix.
🔥 Bake
Pour batter into the prepared pan.
Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
🍵 For the Frosting:
Beat cream cheese and butter together until smooth.
Add vanilla, matcha, and powdered sugar. Beat until fluffy.
Spread on cooled cake and sprinkle with crushed pistachios.

You can double the recipe for a layered cake!
If you want more texture, fold in roughly chopped pistachios before baking.
