Crispy Vodka Tempura Shrimp with Spicy Citrus Aioli

🧂 Ingredients

  • 1 lb large shrimp, peeled and deveined
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ¼ cup vodka, ice cold
  • ½ cup sparkling water, ice cold
  • 1 tsp baking powder
  • pinch of salt
  • ice
  • oil for frying (peanut or canola)
  • ½ cup mayonnaise
  • 1 tbsp vodka
  • 1 tbsp fresh lime juice
  • 1 tsp orange zest
  • 1 tsp sriracha
  • 1 small garlic clove, minced
  • salt to taste

📖 Instructions

🍋 Prepare the Aioli:
In a bowl, whisk together mayonnaise, vodka, lime juice, orange zest, sriracha, and garlic. Season with salt. Chill in the fridge while you make the shrimp.

🍤 Prepare the Batter:
In a mixing bowl set over ice, whisk together the flour, cornstarch, baking powder, and a pinch of salt.
Add ice-cold vodka and sparkling water, and gently mix just until combined (lumps are okay — don’t overmix).

🔥 Fry the Shrimp:
Heat oil in a deep pot to 350°F (175°C).
Pat shrimp dry. Dip each one into the batter and carefully lower into the oil.
Fry in batches for 2–3 minutes until golden and crisp. Drain on a paper towel.

🍽️ Serve:
Arrange shrimp on a platter.
Serve with a side of your citrus vodka aioli for dipping.
Garnish with fresh herbs, lime wedges, or a light dusting of chili powder for flair.

For an extra punch, serve this with a vodka-lime spritz or a bloody Mary shooter to match the flavor profile.
